Lunch!

I enjoy making omelets and I usually try to put bunches of fresh spinach it them..so much bunches that I usually end up with an overstuffed omelet that doesn't close right or the fold comes apart...you know the really important stuff when it comes to eating. This morning I decided to try something different, I put my eggs and hot sauce in my Bella Cucina Blender as I normally do..but then I added in my spinach and blended....sweet...no more stuff-age issues and all I need is some ham and I'll be all set for a Green Eggs and Ham reenactment.

    This morning - left over corned beef, shredded and fried up with onions - when crisp - poured the scrambled eggs on top - kept scrambling until done. My wife would have gone in the direction of an omelett.
